Homemade Gifts of Food: Chocolate and Peppermint Covered ‘Oreo’ Cookies

DSC 0181 Homemade Gifts of Food: Chocolate and Peppermint Covered Oreo CookiesI do not think there is a person in the world that does not think of Christmas cookies: a. If someone asked them ’What do you bake during the Holidays?’ and b. When thinking of gifts of food during the Holidays.

Now, I love making Christmas cookies and making edible gifts but I can get a bit overwhelmed when I think about all of the planning, baking and packaging involved. Therefore (Sandra Lee would be proud), I am sharing a cookie making shortcut….

First of all, I have a confession to make, we do not usually buy Oreos as when we are craving sandwich cookies, I steer towards those made without trans fat, hydrogenated oils, corn syrup, artificial flavors, artificial colors or preservatives but you grab your favorite and try this technique!

Ingredients:
16 or more Chocolate or Vanilla Sandwich Cookies (you can customize this recipe custom for each person)
Wax paper
Candi*Quick Candy Coating (or candy melts from a craft store)
Microwave proof bowls
Dipping fork (found at most craft stores)
Peppermint Candies or Candy Cannes, crushed

1. Take the cookies out of the package. Place wax paper out on the counter.

2. Melt the molding chocolate per manufacturers instructions. Meanwhile, crush some peppermint candies or candy canes in a bag and place in a separate bowl.

3. Place the sandwich cookie in the bowl of chocolate so that one side is submerged lightly and then using a dipping fork, flip the cookie over.

4. Slide the dipping fork under the cookie and gently shake off the excess chocolate.

5. Place the cookie on the wax paper and immediately drop some peppermint candy on the top of the cookies. Allow to dry for a minimum of 15 minutes.

6. Package and label.

Tips: Melt only 1/3 of the candy coting at a time as the cookies may leave crumbs and then you can use a fresh bowl for each 1/3 and not have a thick layer of crumbs on other cookies.
