White Chocolate Christmas Cake

There’s nothing quite like homemade desserts and this scrumptious cake is worth indulging in, so don’t feel guilty about having that second slice. The buttermilk in this recipe makes for a moist texture, and the white chocolate icing gives it a creamy, rich taste. Not overly fussy, it's a simple no-frills cake and relatively easy to make. Top it off with garnishes listed below, and it becomes the perfect compliment to holiday get-togethers and dinners. This cake can easily be made one day ahead of time.

White Chocolate Christmas Cake

  • 4 oz white chocolate
  • ½ cup boiling water
  • 1 cup butter
  • 2 cups sugar
  • 2 ½ cups sifted cake flour
  • ½ teaspoon soda
  • ½ teaspoon salt
  • 4 eggs, separated
  • 1 cup buttermilk
  • 1 teaspoon vanilla
  1. Melt the white chocolate in boiling water. Set aside and allow to cool.
  2. Cream butter and sugar until fluffy.
  3. Add the egg yolks in one at a time beating well after each addition.
  4. Add the melted white chocolate and vanilla mixing well.
  5. Next, sift together flour, salt, and soda and blend alternately with the buttermilk until smooth.
  6. Beat the egg whites until stiff and fold into the cake mixture.
  7. Bake in well greased, floured pans (3 round pans) at 350 Fahrenheit (176 Celsius) for 30-40 minutes.
  8. Let cake cool before icing.
White Chocolate Icing
  • 8 oz white chocolate
  • 3 ¾ cup (about 16 oz) confectioners’ sugar
  • 4 tablespoons hot water
  • 2 egg yolks
  • 4 tablespoons butter, cut in 4 pieces
  • 1 teaspoon vanilla
  1. Melt chocolate over low heat using double boiler.
  2. Add in sugar and hot water.
  3. Add egg yolks beating well.
  4. Next, add the butter one piece at a time, beating well after each addition.
  5. Stir in the vanilla.
  6. Ice cake after completely cooled.
